I Stole La Taqueria's Carnitas Recipe, and I'm Not Sharing it.

Rating: ★★★★☆

My reviews have been getting epically long, so lets keep this one to the essentials - order something with carnitas.

I think god's gift to man was pork. Pigs are my favorite animal, and my favorite animal to eat (hmmm Wilber clearly didn't have a big effect on my life). And, in my eyes, there are few things that can compete with the greasy, crispy, salty goodness of carnitas.

La Taqueria knows how to make carnitas - so much so that the recipe I use when I make them at home is actually their recipe. It was published in some Bon Appetit, or Sunset, years ago, and and I stole it and started pretending that I was just born with the gift of making perfect carnitas. There, I admit it. I stole the recipe. Happy?

I had the carnitas taco, which was as magically delicious as I would expect. The green sauce on the table (tomatillo sauce?) really added something special to my taco experience. My only issues were 1) that there were too many beans (I just find beans unnecessary, but that's just my personal taste), and 2) hot damn! $6.50 for a small taco!? Most expensive taco I've ever eaten.

Next time: carnitas burrito. Bring it.
